- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1/2 cup unsalted butter, softened
- 1 cup milk
- 3 large eggs
- 2 tsp baking powder
- 1 tsp vanilla extract
- 1/4 cup fresh strawberry syrup
- 1 cup heavy whipping cream
- 2 tbsp powdered sugar
- Fresh strawberries for garnish
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- Cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
- Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
- Whisk together the flour and baking powder in a separate bowl.
- Gradually add the dry mixture to the creamed mixture, alternating with the milk. Mix until just combined.
- Divide the batter evenly between the prepared pans and smooth the tops.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow cakes to cool completely in the pans before removing.
- Soak both layers with fresh strawberry syrup.
- Beat the heavy cream and powdered sugar until soft peaks form.
- Frost one cake layer with the whipped cream, place the second layer on top, and frost the top and sides.
- Garnish with fresh strawberry slices and serve chilled.
Notes
Make sure to use ripe strawberries for the best flavor. This cake can be made a day in advance, and individual slices can be frozen.
