Description

Ingredients

  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 3 large eggs
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • 1/4 cup fresh strawberry syrup
  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar
  • Fresh strawberries for garnish

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  3. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Whisk together the flour and baking powder in a separate bowl.
  5. Gradually add the dry mixture to the creamed mixture, alternating with the milk. Mix until just combined.
  6. Divide the batter evenly between the prepared pans and smooth the tops.
  7. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow cakes to cool completely in the pans before removing.
  9. Soak both layers with fresh strawberry syrup.
  10. Beat the heavy cream and powdered sugar until soft peaks form.
  11. Frost one cake layer with the whipped cream, place the second layer on top, and frost the top and sides.
  12. Garnish with fresh strawberry slices and serve chilled.

Notes

Make sure to use ripe strawberries for the best flavor. This cake can be made a day in advance, and individual slices can be frozen.
